Near Tupelo, Mississippi, the Spanish
explorer Hernando de Soto
collaborates with the native Chickasaw
tribe on a feast featuring pork
brought from Spain and prepared on a
barbacoa.

The natives are so impressed they
come back with a war party and take
their host’s remaining pigs off their
hands. Word of the tasty treat
spreads North into the new colonies of
America, where settlers from Europe
introduce mustard and vinegar into
the mix.
